Tofu in ginger and peanut sauce
This is one of my favorite sauce recipes for tofu dishes:
Sauce:
5 tablespoons water
4 tablespoons smooth natural peanut butter
1 tablespoon rice or white vinegar
2 teaspoons soy sauce
2 teaspoons agarve nectar
2 teaspoons minced ginger
2 cloves minced garlic
Tofu and veggies:
14 ounces extra firm tofu
2 teaspoons extra-virgin olive oil
4 cups baby spinach
1 1/2 cups sliced mushrooms
4 spring onions
Add all the sauce ingredients into a mixing bowl and whisk until smooth.
Fry the tofu in the olive oil for a few minutes until a golden brown color. Add the vegetables and the sauce and simmer for a few minutes until the spinach has softened.
